From its inception the Corte dell'Oca has not only been a watchword in the production of typical cooked meat dishes from Lomellina, but has also become a sort of focal point which attracts those interested in the evolution of the local cuisine.
The restaurant beside the shop itself is not only a place to taste the gastronomic wares one offer but also displays traditional local recipes and new dishes invented by the Palestro family, all prepared using the principal local produce.
This means a strong leaning towards rice and goose, obviously cultivated and bred in Lomellina. The goose is reveal as once again being the 'Queen' of the table, in all its various forms.
The restaurant hosts classic recipes such as Ragò, Cassoeula Lomellina or roasted goose served with potatoes sauted in goose oil and delicious braised goose thighs with polenta which is an ideal side dish for the cold and damp Lomellina evenings.
Rice is the unfailing ingredient for starters; among the recipes the Palestro family propose you can find, for example risotto with goose meat salami paste, with black-eyed beans or with goose livers.
Gioachino takes care of the choice of wine to complete the experience.
All of these unforgettable dishes can be tasted in the liberty-style, restaurant designed for just such a special occasion and is reserved for small, select groups of customers.
